A gorgeously schizophrenic tea combining zesty fruit and seasalt air brightnotes, a sweet floral and creamy toffee middle and deeper leather and library grounding flavours.

 

 

This tea is very bud heavy and even the leaves have a thick sheen of tea hairs. We recommend that you brew unfiltered to get the maximum syrupy texture of this Gushu PuErh.

SCOPE ANALYSIS:

Season: Spring 2016

Cultivar: Da Ye Zhong Assamica

Origin: Pasha Mountain, Yunnan, China

Picking and Processing: Bud and up to three leaves. Picked, withered, low fired, rolled and sun dried before compressing into tea cakes

Elevation: 1700m

 

Gushu Pu Erh made from ancient arbor trees in Pasha with a circumference of between 80 and 115cm. This estimates the age of tea trees between 300 and 500 years old although there is no official certification for ageing these tea trees.

 

TASTING NOTES:

DRY LEAF APPEARANCE: Glistening antique silver buds and shiny tortoise shell leaves. Rich in tea downy hairs.

DRY LEAF AROMA: Salt water, dark toffee and leather.

WET LEAF AROMA: Wet laundry, musk cologne and passionfruit jam.

LIQUOR: Pale and cloudy peach nectar.

TASTE: Sweet grapefruit zest, leather bound library books and brown butter. The tiniest hint of bitterness transforms to a lily flower sweetness.

WET LEAF APPEARANCE: Thick and and lustrous pale olive green leaves and golden apple green buds.

TEXTURE: Thick, syrupy, sticky and coating.

MOUTH FINISH: Sticky with mineral stimulation all over the tongue and sheeks and a gently gripping dryness in the throat. Sweet minty coolness.

About Matcha

Matcha is super finely ground (under 10 microns) green tea. It is made so fine using a stone grinder to prevent the addition of heat from machine grinding which reduces the nutrient content. The small particle size means that the tea leaf suspends in water and produces a smooth textured tea. This style of brewing tea is actually very ancient and the method used a few thousand years ago before tea production expanded to allow for brewing whole leaves.

The health advantage of drinking matcha is that you are actually consuming the whole leaf which means that the full therapeutic effects of tea are given to your body. Studies have shown that matcha provides between 3 to 137 times the amount of antioxidants (in the form of high potency catechins) compared with brewed green tea. These figures vary so widely depending on the tea and matcha chosen for the studies. It shows how much difference there is between high quality and poor quality tea. The 137 times figure comes from a study against Starbucks green tea. We think it is a conservative estimate that one shot of matcha gives the same amount of antioxidants as drinking 10-20 cups of high quality green tea. Antioxidants are fundamental to good health by soaking up the free radicals in your body which lead to ageing and ill health.


Our matcha is very high grade. It is sourced from ground Tencha grown at an altitude of 650m on an organic farm in Shizuoka. The farm uses natural predators to remove any insects which would eat the leaf such as Praying Mantis, ladybugs and spiders. The farm has been used to grow tea organically since 1824.


During the growing of the tea leaves the plants are shaded from the sun. This causes the leaf to increase chlorophyll production which gives you the bright green colour and associated health benefits. The Tencha is then stored for many months in a cool environment to age before grinding. If you miss out on this step then the matcha will be lightweight and pale instead of dark and robust.

Directions:

Rose has a cleansing action and can help fight infection in the digestive tract and help re-establish the normal bacterial population of the intestines. Rose is renowned for its internal cleansing properties. 

 

Rose also enhances immunity, helping to restrain the development of infections through their cleansing action. An infusion of rose petals can relieve cold and flu symptoms, sore throat, runny nose and blocked bronchial tubes. 

 

 

 

A WORD ABOUT OUR TEA TASTER BAGS

These taster bags are a great way to sample a tea without buying a larger pack. Each taster bag has enough tea leaves to brew a large family pot or can be split in half if you want to make an individual mug of tea. Do not forget to reinfuse your tea according to our brewing guide recommendations. This means that each taster bag will provide around 4-10 mugs depending on the tea selected.

 

 

Directions:

To brew Western style infuse 6-8 flowers in a mug of hot water for for about 1-2 minutes. Remove tisane from water to prevent stewing and save them for up to an hour to re-infuse. The temperature of water depends on the type of tisane but generally nearly boiling water is suitable for most tisanes. Can be infused up to 3 times simply by adding fresh water.

 

To brew Gong Fu style use 2 heaped teaspoons per 200ml of water and reduce your brewing to 15-30 seconds. The brew will become richer and release its flavour in stages for your enjoyment. You are not wasting the tisane because you can reinfuse the tea many times, just add about 10 seconds extra for each infusion.
